There’s definitely a holiday out there for everything, but this one was too good not to pass up. January 21 is National Banana Bread Day! Banana bread is a great way to use up overripe bananas and it makes a great snack or breakfast item. Celebrate this little-known holiday by rolling up your sleeves and spending some quality time in the kitchen with your toddler. This also makes for a fantastic rainy day activity. Easy Banana Bread Recipe

Ingredients:
3 ripe bananas, mashed
1 cup white sugar
1 egg
¼ cup melted butter
1 ½ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
Directions:
Step 1 Preheat oven to 325 degrees F (165 degrees C). Grease a 9×5-inch loaf pan.
Step 2 Combine bananas, sugar, egg, and butter together in a bowl. Mix flour and baking soda together in a separate bowl; stir into banana mixture until batter is just mixed. Stir salt into batter. Pour batter into the prepared loaf pan.
Step 3 Bake in the preheated oven until a toothpick inserted in the center of the bread comes out clean, about 1 hour.
